Baked Brie with Walnuts & Fresh Fig paired with Chardonnay

There’s something undeniably decadent about a warm wheel of Brie, especially when it’s topped with golden toasted walnuts and garnished with fresh figs – especially from Don and Wendy’s backyard tree!
This simple yet luxurious appetizer captures the essence of late summer—rich, ripe, and meant to be shared. Pair it with a chilled glass of our Three Hills Cuvée Chardonnay for a moment of pure seasonal indulgence.
Recipe
INGREDIENTS
- 1 (8 oz) wheel of Brie
- ¼ cup walnuts, roughly chopped
- 2 tbsp honey (plus more for drizzling)
- 1 tbsp unsalted butter
- 1 tsp fresh thyme leaves (optional)
- 2–3 fresh figs, quartered or sliced
- Pinch of flaky sea salt
SERVE WITH
- Crackers or crostini
- Apple, grapes, or pear slices
Instructions
Preheat oven to 375°F.
Toast the walnuts: in a small skillet, melt butter over medium heat. Add chopped walnuts and toast for 2–3 minutes. Stir in honey, thyme (if using), and a pinch of salt. Remove from heat.
Prepare the Brie: place Brie on a parchment-lined baking sheet or oven-safe dish. Score the top rind in a shallow crosshatch pattern.
Top the Brie: spoon the honeyed walnuts over the Brie.
Bake for 12–15 minutes, until the Brie is soft and melty.
Garnish and serve: arrange fresh fig slices on top just before serving. Finish with a drizzle of honey and a sprinkle of thyme or sea salt if desired.
